For the dough
½ cube Yeast (21 grams)
1 pinch sugar
450 grams Pastry flour
4 Tbsps olive oil
1 tsp salt
vegetable oil (for the baking sheets)
For the filling
400 grams Spinach
salt
5 garlic cloves
300 grams button Mushroom
400 grams crushed Tomatoes (canned)
freshly ground peppers
1 pinch sugar
34 Quail egg
2 Tbsps pink peppercorns
freshly grated Nutmeg
2 Tbsps olive oil

Preparation steps

For the dough: Crumble yeast in a bowl, stir in sugar and 200 ml (approximately 6 3/4 ounces) of lukewarm water until smooth. Add flour, olive oil and salt and knead into a smooth dough. Cover with plastic wrap and let rest for about 1 hour in a warm place.

Preheat oven, with baking sheets inside, to 220°C (approximately 425°F).

Divide dough into 4 balls shapes, roll out on a little flour into round cakes of about 24 cm (approximately 9 1/2 inches) in diameter.

For the filling: Rinse spinach and blanch briefly in boiling salted water. Then drain immediately, rinse with cold water, drain and chop slightly smaller. Peel garlic and cut into slices. Wipe mushrooms with a damp cloth and cut into thin slices. Combine tomatoes with salt, pepper and sugar. Then spread on the pizza crust and top with mushrooms, spinach and garlic. Gently crack eggs open and put on the pizza toppings. Season with salt, sprinkle with nutmeg and peppercorns and drizzle with olive oil. Place pizzas on baking sheets and bake in preheated oven for about 10-15 minutes. Remove and serve.
