Preparation steps

Rinse spinach and blanch in boiling water. Rinse in cold water and drain. Chop coarsely and place in a bowl. Peel onion and garlic and chop finely. Heat 1 tablespoon of butter in a pan and saute onion and garlic for about 2-3 minutes or until translucent. Cool and add spinach. Cut feta into cubes and add to the mixture. Add an egg and season with salt and pepper.

Preheat the oven to 200 ° C convection.

Cut filo pastry into strips about 7 x 22 cm (approximately 3 x 9 inches). Place about 1 tablespoon of the filling on the lower end of a strip. Fold in one of the lower corners to the side edge. Continue folding to make multilayered triangles. Brush the edges with melted butter and press firmly. Make triangles out of all filo strips.

Place triangles on a lined with parchment paper baking sheet and brush with the remaining butter. Bake in preheated oven at 200°C (approximately 400°F) for about 15-20 minutes or until golden brown. Remove from the oven and serve warm or cooled.
