Spinach and Feta Cheese Filo Rolls
For the filling, crumble feta cheese into a bowl. Rinse borage, pluck some leaves, chop finely and add a pair of flowers if desired. Separate eggs and beat egg whites until stiff. Stir egg yolks into feta cheese until smooth, season with salt and pepper and mix in spinach and borage. Fold egg whites into filling mixture.
Heat oil in a saucepan for frying (oil is hot enough when bubbles form around the handle of a wooden spoon when inserted into oil).
Lay out filo dough sheets on lightly floured work surface. Spread filling on lower third of each filo sheet. Brush dough with egg white and roll up filo sheets to cover filling.
Fry filo rolls in oil until golden brown, 2-3 minutes and drain on paper towels. Serve filo rolls immediately or let cool. Garnish filo rolls with borage to serve.
