Ingredients

For the batter
250 milliliters milk
2 eggs
8 Tbsps Pastry flour
salt
freshly ground peppers
2 Tbsps Crème fraiche
For the filling
1 bunch Basil
2 Tomatoes
4 sun-dried Tomatoes
150 grams Feta
In addition
clarified butter (for cooking)

Preparation steps

1.

For the batter: Combine all ingredients and mix well, let rest for about 15 minutes. 

2.

For the filling: Rinse basil, shake dry and pluck off leaves. Rinse and quarter tomatoes, remove seeds and dice. Cut sun-dried tomatoes into small cubes. Dice feta cheese. 

3.

Heat clarified butter in a pan and prepare four crepes from the batter. Keep prepared crepes warm.

Spread each crepe with fresh and sun-dried tomatoes, feta cheese and basil leaves, season with salt and pepper and roll up. Place into an ovenproof pan and bake in preheated oven at 200°C (approximately 400°f) for about 5 minutes. Remove from the oven  and serve.
