500 grams Chicken breasts
30 grams clarified butter
1 garlic clove
1 kilogram Spinach
5 Tbsps olive oil
salt
freshly ground pepper
Juice of half lemons
grated Parmesan

Preparation steps

1.

Rinse and cut scallions into thin rings.

2.

Cut chicken breasts into strips. Heat the clarified butter in a pan and saute chicken and scallions until golden brown. Remove from the pan.

3.

Peel and squeeze garlic through a press.

4.

Rinse spinach clean and spin dry. Heat olive oil in the same pan and cook the spinach and garlic for about 10 minutes.

5.

Season with salt, pepper and lemon juice. Add chicken and scallions and mix well.

6.

Sprinkle with grated Parmesan cheese.
