- For the ragout with penne
- 400 grams Penne
- salt
- 200 grams Dry sausage
- 1 onion
- 1 garlic clove
- 2 Tbsps olive oil
- 1 Tbsp Tomato paste
- 500 grams peeled Tomatoes (canned)
- 1 Tbsp lemon juice
- ½ tsp sugar
- ½ tsp dried oregano
- salt
- freshly ground peppers
- ground paprika (sweet)
- 200 grams Corn kernel (canned)
- For garnish
- scallions
Preparation steps

For the ragout with penne: Cook the penne in boiling salted water for 15-20 minutes until al dente.

Cut the sausage into thin slices. Peel the onion and garlic and finely dice. Heat the oil, sauté the onions and garlic until translucent, add the sausage and fry. Add the tomato paste and cook for a few minutes. Crush the peeled tomatoes, add them to the pan, cover and simmer for about 20 minutes. Add the lemon juice, sugar and oregano. Season with salt, pepper and paprika. Drain the corn and stir into the ragout. Remove from the heat and let rest briefly, covered.
For garnish: Sprinkle with chives and serve with the penne.
