Preparation steps

1.

Peel and quarter the pineapple. Remove the hard core, and cut the fruit into slices.

Rinse, trim, and julienne the chilis. Rinse the limes in hot water. Squeeze the juice from 1 lime, and slice the remaining lime. Rinse, dry, and chiffonade the mint.

3.

Coarsely grind the coriander in a mortar. Mix the coriander with the chili, mint, sesame oil, honey, and lime juice.

4.

Skewer the pineapple, then mix the skewers with the lime slices and the marinade. Let marinate for at least 30 minutes.

5.

Cook the skewers in an aluminum pan on a preheated barbecue grill for 2 minutes per side.
