1 shallot

2 Tbsps pink peppercorns
1 Tbsp sunflower oil
150 milliliters Vegetable broth
150 milliliters Whipped cream
2 centiliters Cognac
salt
1 pinch brown sugar

Preparation steps

Peel and finely chop the garlic and shallot. Rinse and trim the chilis, then thinly slice. Mix together, leaving some chili and peppercorns aside for garnish.

Sauté the shallot, garlic, and peppercorns in the oil. Degalze with the broth and bring to a boil. Add the cream and cognac, reduce the heat, and simmer gently for 10 minutes stirring occasionally.

Puree the sauce, and simmer until the sauce has slightly thickened. Add the sugar and season to taste with salt and lime juice. Garnish with the reserved chili and peppercorns.
