- 1 Roll (or 3 slices white bread)
- ¾ cup milk
- 6 ½ cups Minced Beef
- 1 onion (peeled and chopped)
- ⅔ cup Golden raisins
- 1 cup almonds (skinned and chopped)
- 3 Tbsps Apricot Jam
- 3 Tbsps Fruit chutney
- ⅛ cup lemon juice
- 2 Tbsps Curry powder
- 1 Tbsp ground Cardamom
- 2 tsps salt
- 2 Tbsps olive oil
- 2 eggs
- 4 bay leaves

Preparation steps

Pre-heat the oven to 200°C (180° fan) | 400F | gas 6.

Break the roll into small pieces and soak in the milk for a few minutes. Squeeze out the excess milk, catching the milk in a bowl. Add the bread to the minced beef. Peel and finely chop the onion. Now add the sultanas, almonds, jam and chutney and mix everything together. Season with lemon juice, curry powder and cardamon, salt and 1 tablespoon of oil. Separate an egg. Place one whole egg and the egg white into the minced meat mixture and mix well.

Grease an ovenproof baking dish with the remaining oil. Place the minced meat mixture in the dish. Beat the egg yolk and the milk and pour over the top. Place the bay leaves on top and bake in the oven for about 60 minutes. Cover with aluminium foil if needed.

Remove the dish from the oven and leave to cool. Cut into slices. Serve in a bowl garnished with a few lettuce leaves and cucumber strips.
