1 onion
2 garlic cloves
4 centimeters ginger
1 Cardamom
1 Star anise
2 organic Limes
2 Kaffir lime leaves
1 sprig Lemongrass
1 chili pepper
1 Tbsp sugar
1 Tbsp white Sesame seeds
1 Tbsp black Sesame seeds
2 Tbsps vegetable oil

Preparation steps

Peel onion and garlic cloves and cut onions in half. Peel ginger and cut into slices. Crush cardamom and remove from shell. In a pan, heat onion, garlic ginger, cardamom, star anise and 1 liter (approximately 4 cups) water and bring to a boil. Reduce heat and add meat to pan and simmer over low heat for about 2.5 hours.

Squeeze juice from 1 lime. Finely chop keffir lime leaves, chile pepper and peeled lemongrass. Mix lime juice, leaves, chile pepper, lemongrass, sugar and 1/2 teaspoon salt in a mortar and grind to a paste. Toast sesame seeds in a dry pan and stir into paste. Add a little broth to thin paste. Season with more salt, if needed.

Remove meat from broth and allow to cool slightly and cut into thin slices. Cut remaining lime into thin slices and spread slices over meat and drizzle with lime sauce and serve.
