2 fresh garlic cloves

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Rinse rosemary, shake dry, pluck needles and mince. Combine rosemary, coriander and about 50 ml (approximately 1.7 ounces) of oil. Peel garlic and cut in half, stir into herbed oil. Season oil with salt and pepper.

Rinse and dry beef. Heat remaining oil in a pan and sear beef on all sides. Then place on a baking sheet lined with parchment paper and coat with herbed oil. Roast beef for about 30 minutes.

4.

Remove, slice and serve with flatbread and a minted yogurt, as desired.
