- 1 Tbsp sunflower oil
- 1 small onion (finely chopped)
- ½ tsp Mustard seed
- 2 Star anise
- 2 inches Cinnamon stick
- 1 Tbsp caster sugar
- ⅓ cup distilled vinegar
- 5 cups Vine Tomatoes (cored and roughly chopped)
- salt
- freshly ground Black pepper

Preparation steps
1.
Heat the oil in a saucepan set over a high heat until hot. Add the mustard seeds, star anise, and cinnamon.
2.
Fry for 20 seconds and then carefully add the sugar and vinegar. Cover with tomatoes, stir well, and pour into a slow cooker.
3.
Cover with a lid and cook on low for 5 - 6 hours until the tomatoes are soft.
4.
Adjust the seasoning to taste and leave to cool before spooning into a large, sterilised jar. Seal and store in a cool, dark cupboard.
