- 2 Tbsps salt
- 1 cup Golden raisins
- 3 Tbsps Oil
- 2 tsps ground Cumin
- 1 tsp ground cilantro
- 1 tsp Chili flakes
- ½ tsp ground Black pepper
- 3 cloves garlic cloves (finely chopped)
- 2 inches fresh ginger (finely chopped)
- 1 ⅓ cups Malt vinegar
- 4 cups light brown sugar
- 2 Cinnamon stick
- 2 Vanilla bean
- 4 Star anise

1 Cutting board, 1 Large knife, 1 Tablespoon, 1 kleines Sieve, 1 Paper towel, 1 große Skillet, 1 Wooden spoon, 1 Measuring cups, 1 Fine grater, 1 Citrus juicer
Preparation steps
1.
Cut each lime into 8 wedges. Place in large bowl, sprinkle with the salt and stir well. Cover and leave to stand for 48 hours in a cool dark place, stirring occasionally.

Drain, rinse well and mix with the sultanas.

Heat the oil in a frying pan and add the cumin, coriander, chilli flakes, black pepper, garlic and ginger. Cook for 2-3 minutes until aromatic.

Put the spices into a large pan with the lime and sultanas, vinegar and sugar. Bring to a boil, stirring until the sugar dissolves.
5.
Reduce the heat and simmer for about 1 1/2 hours, stirring occasionally, until thickened. Spoon into warm, sterilised jars. Add the whole spices to the jars, seal and label.
