- 2 Fennel bulb (rinsed, cleaned and finely chopped)
- 2 red chili peppers (rinsed and chopped into fine rings)
- 1 Red onion (peeled and finely chopped)
- 1 Tbsp freshly grated ginger
- 1 Tbsp sesame oil
- 1 tsp Curry powder
- 1 ⅛ cups Red lentils
- 4 cups Chicken broth
- Garnish
- 2 scallions (green parts only)

1 Cutting board, 1 Large knife, 1 Teaspoon, 1 Aluminum pan, 1 Brush, 1 Tablespoon
Preparation steps
1.
Sweat the fennel, chilli, onion and ginger in hot oil until softened. Add the curry powder and fry briefly.
2.
Stir in the lentils and pour in the broth.
3.
Cover and simmer over a low heat for around 20 minutes until the lentils are soft.
4.
Season with salt, ladle into bowls and serve garnished with the spring onion leaves.
