Ingredients
- For the jam
- 300 grams ripe Apple
- 1 Tbsp butter
- ¼ tsp ground cinnamon
- 1 pinch ground cloves
- 160 grams jam sugar (2: 1 ratio)
- 1 Tbsp lemon juice
- 60 milliliters Apple juice
- For the macaroons
- 120 grams peeled almonds
- 2 egg whites
- 1 tsp lemon juice
- 150 grams powdered sugar
- 1 pinch Ground cinnamon
- 1 pinch Cardamom
- 1 pinch cloves
Preparation steps
For the jam: Peel, core and mince apples. Melt butter in a saucepan and saute apples for about 10 minutes. Add spices, sugar, lemon juice and apple juice. Bring to a boil and cook for 4 minutes until bubbly. Remove from heat and let cool completely.
Preheat the oven to 120°C (approximately 250°F). Line a baking sheet with parchment paper.
For the macaroons: Grind almonds in a food processor. Whip egg whites with lemon juice until stiff, gradually add powdered sugar and spices. Beat until glossy, then stir in almonds.
Put batter into a piping bag with a large tip. Pipe uniform meringue dots, about 2 cm (approximately 3/4 inch) diameter, on the baking tray and flatten slightly. Bake in the oven for about 30 minutes, leaving the oven door ajar. Remove from oven and let cool.
Spread half of the macaroons on the flat side with some jam and create a sandwich with another macaroon. Let set and serve.
