- 16 ozs onions (finely chopped)
- 1.333 cups Cider vinegar
- 32 ozs cooking Apple (peeled and cored weight, diced)
- 1 ½ cups sugar
- 1 Tbsp grated, fresh ginger
- 4 ozs stem ginger (thinly sliced)
- salt
- peppers
Preparation steps
1.
Put the onions and half the vinegar into a large pan and bring to a boil. Reduce the heat and simmer gently for 10 minutes.

Add the apples, remaining vinegar, sugar and ginger. Stir over a low heat until the sugar has dissolved, then cook gently, stirring occasionly until thick and pulpy. Season to taste with salt and pepper.
3.
Spoon into hot sterilised jars, cover, seal and label.
