- 2 ¾ cups all-purpose flour
- 1 tsp salt
- ¾ cup butter (diced)

- ¼ cup all-purpose flour
- 1 tsp ground cinnamon
- Nutmeg
- 5 large Apple (for baking)
- 0.1 cup butter (flaked)

Preparation steps

Tip the flour and salt into a large bowl. Add the butter and work to a breadcrumb texture using a fork or dough scraper. Add 4-5 tbsp cold water and knead to a firm, smooth dough. Turn out onto a floured surface and shape into a ball. Cut in half and wrap each half in cling film. Chill for around 30 minutes.

Meanwhile, mix 100 g sugar with the flour, cinnamon, and a pinch each of nutmeg and salt. Mix the sliced apples into this mixture.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Roll out each piece of pastry on a floured surface to slightly larger than the dish. Line the dish with one of these circles, cutting off any uneven edges. Gently press into the base and sides.

Fill the case with the apple mixture, spreading evenly. Dot the butter over the apples, then place the pastry lid on top. Press down around the edge and crimp, ideally using the handle of a wooden spoon.

Pierce the lid 5-6 times. Sprinkle over the remaining sugar and bake for around 50 minutes until golden brown. Cool on a wire rack before serving.
