Preparation steps

Place the rice in a colander and rinse thoroughly with cold water. In a bowl, cover with water and let soak for 20 minutes. Then drain in a colander again.

Put the saffron in a bowl and cover with 3 tablespoons boiling water. Peel the carrots and cut into thin slices. Rinse and drain snow peas.

Heat the butter in an ovenproof saucepan, and sauté the cinnamon, cardamom, cloves, and bay leaves for 2 minutes at medium heat. Rinse the raisins and pat dry. Add rice, raisins, and carrot slices to the spices and sauté for about 3 minutes. Mix in saffron, cashew nuts, salt, and sugar. Pour 3/4 liter (approximately 3 cups) of water into the pan and bring to a boil. Cover the pan and set in the oven at the lowest setting to steam for about 10 minutes. Then stir in the snow peas and let sit another 10 minutes, covered, until tender and the liquid has been absorbed.
