- 4 cups Boiled potatoes waxy (ideally cooked the night before)
- 3 Tbsps olive oil
- 5 stalks parsley
- vegetable oil (for deep-frying)
- 4 cloves garlic cloves (2 sliced, the rest finely chopped)
- 1 large onion (halved and finely sliced)
- ⅓ cup pitted, black Olives (drained, halved if desired)
- ⅔ cup Chorizo (thinly sliced)
- ⅓ cup whole, peeled almonds
- ⅓ cup Parmesan (grated)

Preparation steps
1.
Cut the potatoes in half lengthways and fry in a griddle pan in 2 tbsp hot oil for 4-5 minutes on each side until they have traditional grill marks on them.
2.
Deep fry the parsley in a pan in hot oil, remove with a slotted spoon and drain on kitchen paper. Season lightly with sea salt.
3.
Heat the remaining olive oil in a separate frying pan. Add the garlic and onion and brown briefly, then add the olives, chorizo and almonds. Mix through the potatoes and parsley and season with sea salt and ground black pepper.
4.
Sprinkle with parmesan and arrange on plates or serve country-style in the pan. Serve with salsa verde if desired.
