- 4 Chicken breasts ca. 120 g (4 oz) each
- 1 onion
- 2 garlic cloves
- 3 scallions
- 2 red peppers
- 1 Celery
- 2 chili peppers
- 4 Tomatoes or 150 g (5 oz) chopped canned tomatoes
- 3 Tbsps olive oil
- 1 ⅛ cups Long grain rice
- 2 cups Chicken broth
- 1 bay leaf
- salt
- freshly ground peppers
- 2 Tbsps chopped, fresh cilantro
- ground Cumin

Preparation steps
1.
Rinse the chicken breasts and pat dry. Slice into strips.
2.
Peel and finely chop the onion and garlic.
3.
Remove the roots and ragged tops from the spring onions. Slice into rings.
4.
Halve the peppers, remove the ribs and seeds and slice into strips. Remove the leafy top from the celery stalk and chop.
5.
Remove the stem, ribs and seeds from the chili pepper and finely chop.
6.
Blanch the tomatoes and then immerse them briefly in cold water. Remove the skins and quarter.
7.
Saute the onion, garlic and spring onions in the hot oil. Add the chicken and continue to saute for 1-2 minutes more. Stir in the pepper strips, celery, chili and rice. Pour in the chicken broth and add the bay leaf. Season with salt and pepper.
8.
Cover and simmer for approximately 20 minutes stirring occasionally. When the rice is cooked, add the tomatoes and cilantro leaves.
9.
Season to taste with the cumin, salt and pepper. Serve.
