- ½ cup olive oil
- 2 Tbsps white wine vinegar (to taste)
- 2 unwaxed lemons (one juiced, one sliced)
- 2 cloves garlic cloves (sliced)
- 1 carrot (sliced)
- 1 Tomato (diced)
- 8 Sardine (ready-to-use, approx. 60 g each)
- 1 tsp white peppercorns
- 1 tsp Coriander
- 1 Tbsp Sea salt

Preparation steps
1.
Mix the oil, vinegar, lemon juice, lemon slices, garlic, carrots and tomato in a shallow dish. Add the sardines so that are completely cover in the marinade.
2.
Grind the peppercorns, coriander seeds and salt in a mortar and sprinkle over the sardines. Cover and chill in the fridge for 24 hours.
3.
Remove the sardines from the marinade, pat dry and serve with vegetable purée.
