3 Tbsps olive oil
3 Chicken breasts (skinned)
2 Tbsps butter
2 Leeks (chopped)
2 cloves garlic cloves (chopped)
1 ½ cups Long grain rice
1 cup white wine
2 cups Chicken broth
½ bunch parsley (chopped)

Preparation steps

Heat the oil in a deep skillet and cook the chicken breasts for about 4 minutes on each side or until cooked through and golden brown. Remove the meat from the pan and keep warm.

Heat the butter in the pan and gently cook the leeks and garlic until softened but not brown.
3.
Add the rice, stir until coated then pour over the wine and chicken broth. Bring to a boil then turn the heat down and let simmer gently, stirring from time to time, until the rice is tender and has absorbed the liquid. Add more water if necessary during cooking.
4.
Cut the chicken pieces into chunks and stir into the rice with the chopped parsley. Season with salt and pepper and serve immediately.
