- For the melon salsa
- ½ honeydew melon
- 1 small onion
- 1 red chili pepper
- 2 sprigs cilantro
- salt
- freshly ground peppers
- 1 Tbsp lemon juice
- For the skewers
- 8 Sole fillet
- 8 large Wild garlic leaf
- salt
- white peppers
- 1 Tbsp Lime juice
- 4 tsps chopped Peanuts
- 2 Tbsps butter

Preparation steps

For the melon salsa, halve the melon, remove the seeds, peel and cut into small cubes. Peel the onion and finely chop. Rinse the chile, cut in half lengthwise, remove the seeds and cut into very small cubes. Rinse the cilantro, pluck the leaves from the stems and finely chop. Mix the melon, chile, onion and cilantro and season with lemon juice, salt and pepper.

For the skewers, rinse the sole fillets and pat dry. Season with salt and pepper. Lay 1 wild garlic leaf on top of each piece of fish and thread onto a skewer, securing both. Heat butter in a pan, toast the peanuts in it, then remove. In the same pan, cook the sole fillets on each side for 1-2 minutes. Sprinkle with lime juice. Serve on warmed plates sprinkled with peanuts.
