2 Tomatoes
80 grams Parmesan (whole piece)
2 Tbsps olive oil (cold-pressed)
1 Tbsp balsamic vinegar
1 Tbsp grainy Dijon mustard
salt

2 Tbsps scallions

Preparation steps

1.

Rinse, trim and blanch snow peas in salted boiling water, 2-3 minutes. Drain and place in a bowl with ice-cold water until chilled. Drain again and divide snow peas among 4 plates (or bowls).

Rinse and chop tomatoes and sprinkle over the snow peas. Shave the Parmesan over the tomatoes and season with salt and pepper.

3.

Whisk together mustard, oil and vinegar and drizzle over the salads. Serve sprinkled with chives.
