- 21 ozs Beef fillet (cut into 12 thin slices)
- 1 cup smoked Gouda (grated)
- 2 Tbsps clarified butter
- 4 small Red onions (halved)
- 2 Tbsps olive oil
- 2 Tbsps white balsamic vinegar
- 1 tsp sugar
- 12 sprigs rosemary

Preparation steps
1.
Tenderised the meat gently and sprinkle with the cheese. Roll up and secure with toothpicks.
2.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with greaseproof paper.
3.
Heat the clarified butter in a pan and fry the meat rolls on all sides. Place on the prepared baking tray and bake for around 6-8 minutes.
4.
Fry the onions in hot oil on a medium temperature. Drizzle with the vinegar, season with salt and the sugar and sauté for around 6-8 minutes until soft.
5.
Remove the meat from the oven and arrange on plate. Attach an onion half and a sprig of rosemary to each piece using a toothpick.
