Toast with Smokey Beans
Rinse the beans through a sieve and drain well. Rinse the parsley, shake dry and finely chop the leaves. Peel the bell pepper, cut in half, remove seeds and cut into small cubes. Blanch the tomatoes, peel, quarter, core and also cut into small cubes.
Peel and finely chop the shallot and garlic and fry in some oil until translucent.
Add the bell pepper and beans to the pan and then stir in the diced tomatoes. Deglaze with the broth. Season with salt and pepper and allow to simmer over medium heat for 5-8 minutes. Mix in the parsley and season again.
Toast the bread and serve covered with the beans.
