- 4 Pork saddle steaks
- salt
- freshly ground peppers
- 2 Tbsps Corn oil
- 4 eggs
- 1 Tbsp butter
- 3 Tbsps Caper
- 4 Anchovy fillet
- 1 jar large Mixed pickles
- 1 Baguette

Preparation steps

Rinse the pork, pat dry and season with salt and pepper to taste. Heat the oil in a heavy skillet set over medium heat. Sear the chops until golden, about 3 to 4 minutes per side.
Heat the butter in another skillet. Fry the eggs.

For serving: Rinse the anchovy fillets and pat dry. Arrange the pork chops on plates. Top each with a fried egg. Garnish with the capers and anchovies. Serve with the pickles and baguette.
