- 28 ozs new potatoes (halved)
- 11 ozs Green beans
- 8 Tbsps Sour cream
- 4 Tbsps Mayonnaise
- 2 Tbsps white wine vinegar
- 3 Tbsps Wholegrain Mustard
- salt
- peppers
- 2 scallions (sliced)
- 14 ozs Smoked Mackerel (cut into pieces)
- To garnish
- pea shoots

Preparation steps
1.
Cook the potatoes in boiling salted water for 15-20 minutes, until tender. Add the green beans for the last 5 minutes of cooking. Drain well.
2.
Mix the soured cream, mayonnaise, vinegar and mustard and season to taste with salt and pepper.
3.
Mix the dressing with the warm potatoes, green beans, spring onions and mackerel.
4.
Divide between 4 serving plates and garnish with pea shoots.
