500 grams waxy potatoes
2 stalks Leeks
1 Tbsp butter
1 l fish stock
salt

100 grams Whipped cream
250 grams Smoked fish (such as salmon and mackarel)
1 Tbsp coarsely chopped thyme (for garnishing)

Preparation steps

1.

Peel onion and potatoes and dice. Rinse leeks and cut into rings. Heat butter in a saucepan and saute leeks, potatoes and onion until translucent. Add broth and season with salt and pepper. Simmer for 20 minutes on low heat.  

2.

Add sour cream, cut smoked fish into small pieces and add to the soup. Pour into bowls and serve garnished with thyme.
