- 3 Tbsps Oil
- 3 Tbsps butter
- 2 large Chicken legs (jointed)
- 8 cloves garlic cloves (in their skins)
- 18 ozs Cocktail tomatoes (on the vine)
- 3 sprigs thyme
- ½ cup white wine

Preparation steps
1.
Heat the oven to 200ºF (180º fan) 400ºF, gas 6.
2.
Heat the oil and butter in an ovenproof and flameproof dish on the hob. Rub the chicken pieces with salt and pepper and brown on all sides in the hot fat.
3.
Add the garlic, tomatoes and thyme and pour over the wine. Let bubble then baste everything with the juices, cover with foil and roast in the oven for 30 minutes.
4.
Remove the foil then baste again and roast for a further 20 minute or until the chicken is cooked through.
