- 25 ozs lamb (cubed)
- 2 Tbsps flour
- salt
- peppers
- 2 Tbsps Oil
- 2 Red onions (quartered)
- 2 cloves garlic cloves (crushed)
- 18 ozs Pumpkin (thickly sliced)
- 2 red Bell pepper (roughly chopped)
- 1 rosemary
- 1 cup lamb stock

Preparation steps
1.
Heat the oven to 150°C (130° fan) 300°F gas 2.
2.
Toss the lamb in the flour, salt and pepper until coated.
3.
Heat 1 tablespoon oil in a flameproof casserole dish and brown the lamb in batches. Remove from the dish and set aside.
4.
Heat the remaining oil and cook the vegetables until softened. Add the lamb, rosemary leaves and the stock.
5.
Cover and cook for 1 -1 1/2 hours until the meat and vegetables are tender.
