- 1 egg (lightly beaten)
- 2 Tbsps olive oil
- 3 Red onions (thinly sliced)

- freshly ground Black pepper
- 4 egg yolks
- 1 ⅓ cups cream (48% fat)
- 1 Tbsp chopped thyme
- 2 ozs black Olives (pitted)
- To garnish

Preparation steps

Heat the oven to 220°C (200° fan) 425°F gas 7. Grease a baking tray.

Roll out the pastry on a lightly floured surface and line a 23cm|9" springform tart tin. Roll out the pastry on a lightly floured surface and line the tin. Brush the base with beaten egg and prick the base all over with a fork. Bake for 12 minutes and remove from the oven. Press the pastry base down with your fingers.

Reduce the oven temperature to 180°C (160° fan) 350°F gas 4.

For the filling: heat the oil in a frying pan and gently cook the onions until just softened. Season to taste with salt and pepper and set aside to cool

Beat together the egg yolks, cream and thyme. Stir in the onions and pour into the pastry case. Bake for about 30 minutes until the filling is just set and lightly browned. Scatter with the olives for the last 10 minutes of baking.
6.
Remove the sides of the tin and leave to stand for 10 minutes before serving. Scatter with thyme to garnish.
