1 cup warm water
1 tablespoon white sugar
2 ¼ teaspoons active dry yeast
4 tablespoons olive oil
1 teaspoon salt
2 ½ cups all-purpose flour
1 cup Sweet potato (cut into thin strips)
1 cup vidalia onion (sliced thin)
1 cup shredded Mozzarella
1 cup shredded Fontina cheese

Preparation steps

1.
Preheat oven to 425º F / 220º C.

Stir water, sugar and yeast together until dissolved. Add 3 tablespoons olive oil and the salt. Stir in the flour until well blended. Let dough rest for 10 minutes.

Heat 1 tablespoon olive oil in a large skillet. Add the sweet potato and onion and saute until just beginning to soften. Set aside.
4.
Pat dough into pan or on to a pizza stone using fingers dipped in olive oil.
5.
Sprinkle the mozzarella and fontina cheeses onto the dough. Top with the sweet potato and onion and bake for 20 minutes or until crust is browned.
