- For the tomato chutney
- 6 ½ cups Tomatoes (peeled and roughly chopped)
- ¾ inch ginger (peeled and grated)
- 3 garlic cloves (crushed)
- ⅞ cup sugar
- ⅞ cup Vinegar
- 2 tsps salt
- ¾ tsp cayenne pepper
- For the sandwich
- 8 inches Baguette
- 3 Tbsps Tomato Chutney (homemade or shop-bought)
- 3 slices Tomatoes
- 3 slices sliced, deli Roast beef (finely sliced)
- 1 bunch Lettuce
Product recommendation
Unopened, the chutney will keep at least a year and goes very well with grilled meat. Store opened jars in the fridge.
Preparation steps
1.
To make the chutney, place all the ingredients in a large, shallow pot and simmer until think, stirring often. Pour into sterilised jars and screw the lids on.
2.
To make the sandwich, cut the baguette in half lengthways and spread one half thickly with tomato chutney. Place the tomato slices on top and season with salt and ground black pepper. Add the meat and the lettuce leaves and place the other baguette half on top.
