Spiced Tomato Preserve

Plunge the tomatoes into salted boiling water for a few seconds. Drain and rinse under the cold tap. Peel and remove the seeds.
Pulse together the onion and the tomato pulp, into a coulis in a food processor.
Mix the tomato/onion coulis with the lemon juice, a large pinch of table salt, the sugar, grated ginger and Tabasco in a bowl.
Season to taste and put in the fridge for 2 hours. Serve with slices of toasted farmhouse bread.
