70 grams Pancetta (sliced)
2 Buffalo mozzarella
2 eggs (for dipping)
1 garlic clove

6 Tbsps breadcrumbs (for coating)

Preparation steps

1.

Clean mushrooms and wipe with paper towels. Cut pancetta into 2 cm (approximately 3/4 inch) pieces. Cut mozzarella into bite-sized pieces. Thread the prepared ingredients alternately onto skewers.

Whisk eggs in a deep dish. Peel the garlic and squeeze through a press into the eggs. Season eggs with pepper.

Put flour in a second deep dish and place breadcrumbs in a third plate.

4.

Dredge mozzarella and mushroom skewers first in flour, then dip in beaten eggs and coat in breadcrumbs.

Heat oil in a wide pan. Add mozzarella and mushroom skewers and fry until golden brown, about 5 minutes, turning frequently. Drain on paper towels and serve immediately.
