2 zucchini

Preparation steps

Rinse the fish fillets, pat dry, cut into bite-sized cubes and mix with the lemon juice. Trim the zucchini, rinse, cut lengthwise into quarters and then cut 2/3 of the zucchini into 1.5 cm (approximately 2/3 inch) wide pieces, and the rest into thin slices. Cut the pineapple into bite-sized pieces.

Thread the zucchini with the fish and optionally the pineapple on wooden skewers, starting with a thick piece of zucchini or a piece of pineapple, then a salmon cube, then a thin slice of zucchini, a cod piece and then another thick piece of zucchini. Brown the skewers on a hot grill while occasionaly turning, arrange in a bowl or pan and serve sprinkled with pepper and sea salt.
