Fish and Vegetable Skewers
Rinse fish, pat dry and cut into bite-sized cubes. Rinse tomatoes. Rinse zucchini and cut into 1 cm (approximately 1/2-inch) thick slices. Alternately thread ingredients on 4 wooden skewers and brush with olive oil. Place in a shallow dish and add herbs. Marinate for about 2 hours.
Season with salt and pepper and cook on a preheated grill or in an uncoated pan until golden brown on each side, 1-2 minutes.
