- 8 cups chicken stock
- 4 cups water
- 1 tsp marjoram
- 1 Tbsp fresh rosemary (chopped)
- 2 Tbsps fresh parsley (chopped; plus extra for garnish)
- 3 scallions (sliced)
- 1 medium onion (sliced)
- 1 cup carrots (sliced)
- 3 ribs Celery (sliced)
- 2 cups cooked Chicken breasts (roughly cut)
- 2 russet potato (peeled and cubed)
- salt (to taste)
- peppers (to taste)

Preparation steps
1.
In a large pot, combine chicken stock, water, marjoram, rosemary and parsley. Simmer for 15 minutes.

Add onions, carrots, celery, cooked chicken, and potatoes. Add salt and pepper to taste. Simmer over low-heat for 35 to 45 minutes, stirring occasionally. Serve.
