Chicken and Vegetable Soup

- 200 grams green Beans

- 3 onions
- 500 grams mixed, small Tomatoes (red and yellow)
- 3 carrots
- 400 grams Chicken breasts (ready to cook, skinless)
- salt

- sweet ground paprika
- olive oil
- 150 milliliters dry white wine
- 850 milliliters Chicken broth
- 2 Tbsps scallions
Preparation steps
Rinse green beans and blanch in boiling salted water for about 10 minutes. Drain, rinse with cold water and drain again. Peel onions and cut into wedges. Rinse, dry and halve tomatoes. Peel carrots and cut diagonally into narrow slices.
Rinse meat, pat dry, season with salt, pepper and paprika. Heat 2 tablespoonsof oil in a pan and sear meat until golden brown. Reduce heat and cook meat until done.
Heat 2 tablespoons of oil in a saucepan and saute onions and carrots. Deglaze pan with wine, add broth and simmer for about 5 minutes on medium heat. Add tomatoes and beans, season with salt, pepper and simmer for another 5 minutes. Cut meat into bite-sized pieces, add to the soup and let rest briefly. Season soup to taste, pour into bowls and serve sprinkled with chopped chives.
