1 small Tomato (rinsed; trimmed and sliced)

Preparation steps

Heat a 10-inch nonstick skillet over medium heat; add butter.

Meanwhile, in a medium bowl whisk eggs together until light and fluffy, season to taste with salt and pepper.

Pour eggs into the hot skillet. Whisk eggs and shake the skillet back and forth over the heat, until eggs begin to set. Let the cook until almost completely set, 1 to 1 1/2 minutes.

Sprinkle half of the omelet with grated cheese. Using a rubber spatula, carefully loosen eggs from the edges of the skillet, and then fold the omelet in half over the cheese filling. Lightly press down on the omelet with the spatula to create a seal.
5.
Transfer the omelet to a serving plate. Garnish with sliced tomato, thyme and cilantro. Serve immediately.
