Preparation steps

Separate the eggs. Whisk yolks with quark and chives, then season with salt and pepper. Beat whites not quite until stiff and fold in. Let the egg mixture set briefly in hot butter in an ovenproof skillet, then fold using a spatula on one side, sprinkle with cheese and bake in a preheated oven (200°C, approximately 400°F) until the cheese melts.

Garnish immediately with basil. Serve with arugula salad.
