- 2 Bell pepper (thinly sliced)
- 1 cup Corn salad (lamb's lettuce)
- salt
- freshly ground Black pepper

Preparation steps
1.
For each omelette, crack two eggs into a small bowl and beat thoroughly with seasoning.
2.
Coat an omelette or small frying pan with non-fat cooking spray. Heat over moderate heat until hot.
3.
Pour the beaten egg into the pan, tilting it to let the egg run to the edges. As the egg starts to set, pull it away from the sides with a spatula, allowing any uncooked egg to run underneath and cook.
4.
After 60-90 seconds, fold the omelette over in half and slide it out of the pan onto a plate. Repeat for the other omelettes.
5.
Garnish with red pepper and lamb's lettuce when serving.
