- 20-24 large, crude shrimp (about 500 grams)
- 100 milliliters Rice wine
- 2 Tbsps Ginger syrup
- 2 Tbsps light soy sauce
- 1 tsp sesame oil
- 50 grams Walnut
- 1 bunch scallions
- 2 Red chili peppers
- 1-2 pickled slices ginger (from a jar)
- 3 Tbsps vegetable oil
- 100 milliliters fish stock (prepared)

Preparation steps
1.
Remove shells from shrimp, rinse and pat dry. In a bowl, mix rice wine with ginger syrup, soy sauce and sesame oil. Add shrimp and walnuts and marinate about 2 hours.

Rinse, trim and cut scallions diagonally into pieces. Rinse, trim and halve chiles and thinly slice crosswise. Cut ginger slices into strips.

Remove shrimp from marinade and pat dry. Heat oil in a pan. Add shrimp and sauté about 3 minutes. Add scallions and chiles and sauté briefly. Add marinade with walnuts and fish stock and bring to a boil. Season with salt and pepper.
4.
Peel carrot, cut lengthwise into thin slices, and with small cutters cut out Chinese motifs. Arrange shrimp in a bowl and garnish with decorative carrot pieces.
