- 125 grams fine Instant glass noodle
- 16 King prawn (ready to cook)
- vegetable oil (for frying)
- 1 egg white
- 2 Tbsps lemon juice
- 2 Tbsps soy sauce

Mix lemon juice and soy sauce in bowl. Add shrimp and toss to coat. Cover and refrigerate for 15 minutes. Pour warm water over the instant rice noodles and let soften for about 10 minutes. Drain in colander and let stand to drain very well. Pat the shrimp dry and thread each onto a wooden skewer.

Whisk the egg white. Use your fingers to coat the noodles with the egg white. Wrap some noodles around each shrimp. Cook the skewers in hot oil about 1 to 2 minutes. Drain on paper towels. Season with salt and serve.
