- 4 Beefsteak tomato
- 1 tsp ginger (freshly grated)
- 2 garlic cloves
- Lime juice
- salt
- freshly ground peppers
- 1 tsp honey
- 12 shrimp (deveined and peeled down to tail)
- 200 grams redfish fillet
- zested and juiced Limes
- 2 Tbsps olive oil
- 2 Tbsps slivered almonds
- 12 Seashells

Preparation steps
1.
Blanch tomatoes in boiling water for about 1 minute. Rinse with cold water, peel, quarter, remove seeds and dice flesh. Peel and mince garlic. Combine tomatoes, garlic, ginger and honey. Season with salt, lime juice and pepper.

Rinse shrimp and rose fish pat dry and dice. Heat oil in a pan and cook shrimp and fish for 2-3 minutes. Season with salt and pepper.
3.
Roast almonds in a dry pan until golden brown.
4.
Fill shells with tomato sauce and add shrimp and fish. Sprinkle with almonds and serve.
