200 grams shrimp (cooked and ready to eat)
2 scallions
1 small ripe Mango (300 grams or approximately 11 ounces)
1 pc ginger (10 grams, or approximately 1/2 ounce)
6 eggs
3 Tbsps
2 Tbsps light soy sauce
1 tsp Lime juice
salt
peppers
2 Tbsps sesame oil
½ bunch Fresh herbs (such as basil)
1 Lime

Preparation steps

1.

Rinse the shrimp under cold water and pat dry. Rinse the scallions  and cut into thin rings.

2.

Peel the mango, cut the flesh away from the core and cut into small cubes. Peel and grate the ginger.

3.

Beat the eggs with the milk and season with soy sauce, ginger, lime juice, salt and pepper.

4.

Heat oil in a pan. Pour eggs into the pan and stir occasionally over medium heat for about 4-5 minutes until they begin to solidify.

5.

Add the scallions, shrimp and mango cubes. Cook while stirring for about 2 more minutes.

6.

Meanwhile, rinse the herbs and shake dry. Rinse the lime under hot water, pat dry and cut into wedges.

7.

Serve the scramble garnished with herbs and lime wedges.
