- 4 large carrots (peeled and julienned)
- 4 sticks Celery (peeled and julienned)
- 1 Tbsp parsley (finely chopped)
- 2 Tbsps low-fat Mayonnaise
- 1 lemon (juiced)
- salt
- peppers

Preparation steps
1.
Combine the carrot and celery in a large mixing bowl. Add the mayonnaise and half of the lemon juice.
2.
Toss to mix well and add more lemon juice if needed.
3.
Adjust the seasoning then spoon into serving bowls. Sprinkle the chopped parsley on top.
4.
Serve immediately.
