- 1 medium, red Cabbage (shredded)
- 2 large onions (chopped)
- 1 cooked Chestnut (roughly chopped)
- 16 ozs cooking Apple (peeled, cored and chopped)
- 1 clove garlic cloves (crushed)
- ½ tsp grated Nutmeg
- ¼ tsp ground cloves
- 1 Tbsp Juniper Berry (crushed)
- 3 Tbsps dark brown sugar
- salt
- peppers
- 3 Tbsps Red wine vinegar
- 1 Tbsp lemon juice
- ⅛ cup butter
- To garnish
- thyme

Preparation steps
1.
Heat the oven to 150°C (130° fan) 300°F gas 2. Grease a baking dish.
2.
Layer the cabbage, onions, chestnuts and apples, in the dish, sprinkling each layer with the garlic, spices, sugar, salt and pepper.
3.
Mix the wine vinegar with the lemon juice and pour over the contents of the dish. Dot with the butter and cover tightly. Cook for 2-2½ hours, stirring once during the cooking time, until the cabbage is tender. Garnish with thyme.
