- 1 Tbsp olive oil
- 1 onion (chopped)
- 4 cloves garlic cloves (finely chopped)
- 6 ripe Plum tomato (roughly chopped)
- 1 cup dry white wine
- 2 bay leaves
- 53 ozs mussels (scrubbed, beards removed)
- salt
- peppers
- To garnish
- bay leaves
- thyme
- To serve
- crusty Bread (toasted)

Preparation steps
1.
Heat the oil in a large pan and cook the onion for 5 minutes until softened. Add the garlic and cook for a further 2-3 minutes, stirring, until golden.

Add the tomatoes and cook for a further 2 minutes. Pour in the wine, add the bay leaves and bring to a boil.
3.
Add the mussels, cover and cook for about 4 minutes, shaking the pan occasionally until all the mussels have opened. Discard any that do not open. Discard the bay leaves and season to taste with salt and pepper.
4.
Ladle into warm serving bowls. Garnish with bay leaves and thyme and serve with crusty toasted bread.
